How to enjoy

Bring to room temp for about 30–60 minutes before cooking.

Season simply with salt (and pepper if you like). This steak shines on its own.

Sear over high heat — pan or grill — until you get a deep, dark crust. Finish to medium-rare or medium for the best texture and flavor.

Let it rest 5–10 minutes so the juices settle back in.
