Bavette is a flavour-forward steak cut from the lower sirloin/abdominal area. It’s often confused with flank, but it’s a different cut: bavette has a looser grain and a more tender chew when cooked correctly, which makes it especially good for slicing and serving.

From our 75% Wagyu Steer, this bavette gets extra marbling and richness, which boosts juiciness and gives the cut a deeper, almost buttery beef flavour while still keeping its signature “steak with texture” character.

This is a butcher’s and chef’s cut — not delicate like tenderloin, not tight like striploin — but something in between that really rewards bold cooking and proper slicing.

How to enjoy

Cook hot and fast to medium-rare or medium, then rest well. Slice thinly against the grain — this is the key to tenderness.

Bavette is built for flavour, so don’t be shy with it: chimichurri, pepper sauce, garlic butter, soy-ginger marinades, or taco-style seasoning all work brilliantly.
