How to enjoy
Cook it just like a proper steak — hot and fast.
Because these are smaller cuts, they cook quickly, so keep a close eye and aim for medium-rare to let the flavor shine.
Dry the steak thoroughly before cooking, then season simply with salt and pepper, sear hard in a pan or over the grill, and finish with a short rest.
