Often called the butcher’s favorite (and the cut butchers used to keep for themselves), this cut is prized for its deep, beef-forward flavor and loose, juicy texture. From our 75% Wagyu cross cattle, it brings together rich marbling and bold character in a way few cuts can.

At nearly 900g, this is an exceptionally large hanger, a reflection of a well-raised animal and careful farming. It’s not a common steak—and that’s exactly the point.

How to enjoy

Keep it simple—this cut does the heavy lifting.

Salt it well, sear it hot, and don’t overcook it. Medium-rare is where it shines. Let it rest, then slice it against the grain to keep it tender.

Serve it as-is, or go classic:

•with fries and a sharp mustard or herb butter

•sliced over a salad

•or tucked into a steak sandwich
