Season well with salt and bring steaks to room temperature. Start cooking fat-side down in a hot pan or on a hot grill until the fat renders and turns golden. Sear both sides, then lower the heat and finish to medium-rare or medium. Rest for 15 minutes, then slice against the grain for maximum tenderness.
